Recipe of the Month

Quick Chili
Recipe preparation time

Active 10 minutes  Total 20 minutes  Cost: $5 for 4 servings

 

½ pound of lean ground beef

15 ½ ounce can kidney beans, drained save liquid

1/3 c bean liquid

1 c canned tomato sauce or petite diced tomato, no salt added

1 TB instant minced onion or finely chopped med. onion

¾ to 1 ½ TB chili powder
Add Salt and Pepper to taste

Fun Option:  Add Cilantro as a topping; Add another can of black pinto or white beans

Directions:
 

1.      Brown beef and drain off fat.

2.      Stir in remaining ingredients

3.      Bring to a boil. Reduce heat, cover and simmer 10 minutes. 

We Give a Crock Directions: Cook beef night before and throw everything in the crockpot on low for 6-8 hours.

 

Makes 4 servings. 

Calories;  230, Total fat: 9 grams, saturated far 3 grams, cholesterol 34 milligrams, sodium 390 milligrams.

 

Serving ideas:

 

Serve with whole wheat rolls made from frozen bread dough, prepackaged salad with lowfat dressing, frozen yogurt with fruit and low fat milk.

 

·       Make extra chili for “planned overs”

o   Use the rest to;

Top baked potatoes

o   Make an easy casserole by combining cooked pasta shells with planned over chili

o   Make a quick and easy taco salad by topping lettuce with planned over chili, diced tomatoes and shredded cheese or

o   Double recipe and use leftovers as follows for Taco Soup; heat and add taco seasoning to taste, top with cheese, sour cream and corn chips, enjoy!
